Here’s a super fast (20 minutes) recipe that’s delicious and healthy. It’s also gluten free!

My kids love it too.

Black and White Chicken Chili

 

Ingredients:

2 – 14oz cans of cannellini beans

2 – 14oz cans of black beans

2 – 16oz jars of tomatillo salsa (green salsa or salsa verde to your level of spice)

1 – Rotisserie cooked chicken

For Topping:

Crumbled queso fresco or feta

Chopped green onions

Diced avocados

Crumbled tortilla chips

Lime wedges

Preparation:

Shred rotisserie chicken and set aside.

Drain and rinse the beans. In large saucepan, mix beans with salsa. Add 1-2 cups of water depending on your preference for thickness of chili. Bring to a simmer and cook, stirring often, about 8-10 minutes. Stir chicken in to chili and let summer for another 5-10 minutes.

Serve chili with toppings and lime wedges. Salt & pepper to taste.
